About a month ago I canned a batch of chili. (And two jars of water, because...uh...I had space for two more jars.) Most of it's in the fridge, since as a novice I wanted to take all precautions, but one jar's in the pantry.
Over the last week I've eaten the first jar from the fridge with no ill effects. I figure that's promising.
The jar in the pantry looks fine. My current plan is to leave it in the pantry 'til mid-November, then (assuming no odd smells) eat it, and see how things go.
I'm thinking of trying canning some potatoes and hamburger this week. Potatoes because they're kind of a staple and just don't store great around here, hamburger because it's on sale.
Anyone know an equivalent of the USDA canning guide for dehydrating?

I was going to vacuum-seal some dried rice and beans. I got the beans done, but found three unfortunate things:
Discovery 1: I accidentally ordered mylar bags for a chamber vacuum sealer. I wasted a good amount of time trying to come up with a way to use them anyway, without success. I ended up vac sealing the beans into a regular bag, with deoxygenator and dessican, then just sealing that into a mylar bag. Inelegent, but it'll work.
Discovery 2: I'm out of vacuum bag rolls, which I remembered as soon as I saw the empty box.
Discovery 3: Now that I'm actually interested in canning, I've lost my attachment for vac-sealing mason jars. That would have been kinda handy.

Made deer jerky on smoker yesterday, about 5 lbs - it'll be gone in a week

Man, I haven't had good deer jerky since I was in high school.
I don't hunt, so making my own is not an option and the commercially available stuff has to be mixed with beef or pork due to some law and that just overpowers the venison flavor.

I haven't decided if I'm going to take a deer this year.

If nothing else, the pastor from my mother's church makes deer jerky and I can always ask if he'd sell me some whenever he makes a batch.

Both the vector and I tested negative, so only 14 day's quarantine. I did miss my hunting trip.
If I decide to shoot something, I can go to my parents' place 'til like mid-January. Not as good a hunting ground as I missed out on, but there's some deer in the area that need culling.

I made a meatloaf tonight and, about 5 minutes after putting it in the oven I realized I forgot to season it.
I did use seasoned breadcrumbs at least, and glazed the top, and it does have a nice bit of sweet onion in it. Should be okay.

Every time I try to make meatloaf, it turns out kind of greasy and not at all like the meatloaf you see on TV on "Diners, Drive-ins and Dives". By that I mean the TV meatloaf stays together and doesn't fall apart when cutting into it like the ones I make do.

Every time I try to make meatloaf, it turns out kind of greasy and not at all like the meatloaf you see on TV on "Diners, Drive-ins and Dives". By that I mean the TV meatloaf stays together and doesn't fall apart when cutting into it like the ones I make do.
2 lbs. ground beef (I like 90/10 as it's less greasy)
2 eggs
1/2 cup sweet onion (Vidalia or Walla-Walla)
1 cup bread crumbs (okay to used seasoned but I try to not go over 1/2 seasoned and 1/2 not)
1 tablespoon parsley flakes
1 tablespoon oregano
Knead by hand adding a splash of milk as needed to facilitate proper mixing and shaping
I prefer to cook mine in a Wilton meatloaf pan but there are other brands, or you can shape it by hand on a cookie sheet but risk grease drips. Glaze with a 1/2 cup of ketchup mixed with 1/4 cup brown sugar. Okay to thin the glaze mixture with a little wine vinegar as needed, and/or add chili powder/sauce for some kick. Bake at 350 ~45 minutes

Let the loaf cool for 15 to 30 min. It will hold together better.

Matter of fact, it wasn't up until a few years ago that I first had meatloaf. Never thought to make it until just a few years ago.

You're missing some good eating then. Take a slice straight out of the leftovers in the fridge, put it on your choice of bread and garnish with a bit of ketchup or whatever you like, and eat it just like that.
