So a fellow poster who shall go unnamed insinuated that Borscht was a good soup. As an avid soup consumer I am offended by this and as challenging him to a duel is illegal
I ask what your favorite soup is. For me it is a roux based Crawfish Etoufee closely followed by a simple Tomato Bisque.

Below, my response to why Borscht is not in the pantheon of great soups in America.

I mean in the North East you have your Bisques and Chowders, here in the South you have Gumbo and Jambalaya as well as french roux style soups , in the South West chicken tortilla soup and your hot pepper soups, in the Midwest hardy potato, lentil, and pea soups. In the West coast your asian style soups like Ramen, Soba, Fohh, and all the Chinese and Korean styles as well. The soup world is much richer than cold beet soup

Favorite soup is as hard to choose as favorite cookie...
but the one we make most is stew.
Beef stew, chicken stew. (To us, a stew has larger vegetables than a soup, a little less liquid.)

Too tough of a question for an "all-time" list. Now that the colder weather is arriving, I would not want to choose just one. For today, I went with New England Clam Chowder, 4 grapes, 3 carrots, 2 fishes and 1 piece of Italian bread, toasted.
Oh, and a pinch of black pepper.

I don't have a picture of it, but my wife makes this soup that is amazing. I'll even give you folk the basic recipe.

-Cook up some chorizo and drain.
-add a sliced red onion.
-add some stock, I think she uses beef stock.
-a couple diced sweet potatoes
-a can of drained garbanzo beans.
-add a healthy amount of kale.
-drizzle a small amount of balsamic vinegar in your bowl right before eating it.

Well- it used to be New England Clam Chowder served in a sour dough bread bowl. Zuppa Toscana was a close second. But then I quit eating shellfish and pork.

Now it would be borscht! :clap:

Actually, I've never had borscht and my wife hates beets- so I probably never will.

It would do you no good to challenge me to a duel anyway, for my veins are filled with beets and vinegar!

I've never tried Crawfish Etoufee, or crawfish at all for that matter. I'd be willing to give it a shot, but if it tastes anything like lobster I don't think I'll be a fan. If I'm going to eat bugs I prefer ants or grasshoppers.

I will agree with you about tomato bisque, it is my third favorite soup, with milk dumplings being my favorite and borscht being my second favorite.

When I make borscht I don't follow a set recipe, I use various amounts of whatever is around. Here is an approximate recipe:

Ingredients:
4 shredded beets (fresh beets are best, canned will do if that's all you have)
1 large diced onion
3 diced carrots
1 lbs hamburger
1 bulb diced garlic
1/2 a small head of cabbage, shredded
1 can diced tomatoes (don't drain, dump the whole thing in)
1 can tomato sauce
caraway seeds (a bunch?)
cayenne pepper
black pepper
salt
Vinegar! Lots of vinegar!
heavy whipping cream

Directions:
Fry up the hamburger with the onions and garlic.
Put it all in a pot with the other ingredients, except for the cabbage and cream.
Add enough water that you can stir, and bring it to a boil for a little bit.
Turn it down and simmer it for at least an hour.
I throw the cabbage in near the end, because I like it to be cooked but somewhat firm.
I don't know when to add the vinegar. I usually start putting some in at the beginning and keep adding a glug or two more every once in a while. I like it vinegary.

You cook it down a lot. When it cools down it should be pretty much a solid that you could eat with a fork if you wanted to. This is fine, because the liquid will come from the heavy whipping cream, which you add to each bowl after you heat it back up. Re-heat it to be extra-hot, as the cream will cool it down some.

The cream is very important!

I hate beets. I hate the way they smell, look, taste, and in general just exist. Vinegar is fine in small doses and everything else I am down with. There are really two main influences in southern soups. French and African with a small dollop of Native American as well. Now when it comes to Crawfish the big question is to suck the heads or not?

That sounds delicious.

Yesterday I was thinking about trying to make beet and onion perogies. It seems like the kind of thing that would be tasty, but I haven't tried it so I'm not sure yet.

#3 for me has to be Japanese Ramen. I don't mean the .35 cent packet at the grocery store. I mean actual handmade Ramen usually it has quail eggs, pork or beef, greens, home made noodles, and the broth is the kicker. You gotta use chopsticks and an asian spoon to really get it.

But my mom makes this Shrimp Corn Chowder that is to die for. And she's never actually tasted it. Cream cheese, milk, crushed red peppers, corn, and shrimp. Somehow makes magic.
