What are we all about?
The Kit Cook-Off challenges participants to find creative uses for the three day's worth of food and potable water that you squirreled away for the family in case of an emergency. So take a look in your pantry and get cooking.
About Us
The Emergency Kit Cook-Off is a participatory National Preparedness Month activity inspired by the contents of the 72-hour emergency food kit; it asks you to vote on ingredients and then create a recipe using those ingredients.
In 2011, the Arizona Department of Emergency and Military Affairs (DEMA) partnered with the Le Cordon Bleu College of Culinary Arts in Scottsdale to design this unique cooking challenge. We've since teamed with additional partners, including the CDC Foundation and the CDC Office of Public Health Preparedness and Response, just as dedicated to inspiring the public to be proactive in their preparedness planning.
Arizona Department of Emergency and Military Affairs (DEMA)
The Arizona Department of Emergency and Military Affairs (DEMA) coordinates emergency services and the efforts of State of Arizona agencies to “reduce the impact of disasters on persons and property in Arizona.”
DEMA subscribes to a “Whole Community” philosophy that frames preparedness as a shared responsibility requiring the concerted effort of individuals, families, communities, schools, businesses, and government. Preparedness is not something one person does separate from another but a condition we contribute to together. In keeping with “Whole Community” approach, participation in the Emergency Kit Cook-Off is open to anyone living anywhere.

MARS TEA
Mars tea has the colors of the planet mixed in and then can be served hot or even cold. The addition of Tang gives the tea a delicious orange taste that definitely is out of this world and on to faraway planets!
Recipe Ingredients
About 2 cups Tang (orange flavor)
1 1/2 cups sugar
2 tsp. cinnamon
1/2 cups instant tea
1 tsp. ground cloves
Directions
1. Set water to boil.
2. In large bowl mix all ingredients, stir, and then place in dry waterproof containers, jars, or Ziploc bags for easy stashing and portability.
3. Place two heaping tablespoons of the mixture in your mug/cup.
4. Add 8 oz. of boiling water, stir, and enjoy!

TEA BREAD
A delightful fruit and nut bread with a hint of orange from a zesty Tang glaze. Yummy as a snack or toasted. This recipe uses three of this year's Featured Ingredients: dried fruit, Tang and dried eggs.
Recipe Ingredients
2 cups all purpose flour
3/4 cup sugar
3/4 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1 cup dried fruit
1/2 cup chopped nuts
2 Tbsp freeze dried eggs (plus 3 tablespoons water)
2 Tbsp vegetable oil
1/2 cup unsweetened applesauce
1/2 cup water
Glaze
1 tablespoon Tang drink mix
1/2 cup powdered sugar
1/3 cup water
Directions
1. Preheat oven to 350 degrees. Grease 9x5 loaf pan.
2. Combine flour, sugar, salt, baking powder and baking soda. Add dried fruit and chopped nuts, stir to coat with the flour mixture.
3. Mix egg with water to rehydrate. Add oil, water and applesauce. Combine with the flour mixture and stir until just combined. Spoon the batter into the greased pan.
4. Bake at 350 degrees for 50 minutes or until toothpick comes out clean. Let bread sit for 10 minutes.
5. Prepare glaze while bread is cooling. Mix Tang, powdered sugar and water. Additional water may be needed depending on the desired thickness of the glaze.
6. Remove bread from pan and place on cooling rack. Add glaze.
7. Let cool completely before slicing.
