So what if the zombies aren't mindless creatures and they're just like a human evolution? Couldn't they just repopulate the world and have it be a zombie world?

Well.. if we agree that in order to become a zombie, you have to be bitten, or infected and killed, zombie will not reproduce in the conventional way. What is more, they are technically dead so they will decompose sooner or later, though it depends on the doctrine. And finally, in most reference materials their brain activity is revoked only to the parts responsible for eating. Soo.. they won’t have enough time to evolve like people over thousands of years

In that case, you're talking about a virus that only causes effects of sickness and necrosis.

Could you define your definition of "zombie" for us, OP?
