Small PSA:
When adding essential oils (say one word about it being girly and I'll ban you to Zombie Biology) be sure to add about 1/2 what you think is necessary.
5 drops per 10 gallons, good. 20 drops = leaving you smelling like a tart's hankerchief.

There's no reason to waterbath can pickled eggs. In fact, it'll make the eggs turn a funny color, not to mention I bet it'll make the flavor a bit unique.
