What is the real difference between gauze pads and gauze sponges? In the past, I've been taught to place a sponge first on a heavily draining wound, followed by a surgical pad. Couldn't a gauze pad be used instead?

Sponges are supposed to be more absorbant then gauze pads, but for First-aid, I don't think there's a significant difference.

You're making this too hard.

Carry a dozen or two 4x4 gauze pads and several rolls of Kerlix and be done with it.
