Seasoning canned beans

Postby Nozoki » Fri Aug 03, 2012 2:13 pm

I recently canned a bunch of pinto beans and I didn't add any seasoning or spices during processing other than a teaspoon of salt to each jar. It's convenient having beans ready to go anytime, but they are pretty bland as is. Any ideas on imparting some flavor into them during re-heating?

Canned peas+corn.

Hot sauce.

Any sauce.

pre-mixed seasonings like:

Bacon salt!
Bay leaves
Dried diced onions
Taco seasoning
Bouillon of different flavors, I found ham flavor in the Mexican food section of the grocery store

Not all together, just some simple additions.

I'll second the liquid smoke and brown sugar suggestions.

All the suggestions sound great. Bacon drippings are always tasty in beans too. I think my mom always had a container of drippings on hand for just such a purpose.

Search for "quick cassoulet". Lots of good recipes should pop up.

If there is any liquid, I'd drain it off before heating.
Adding the seasonings in a liquid form and heating 'long & slow' would allow the beans to soak in the flavor rather than just have it on top.
Or one could mash the beans with the seasonings, and fill some tortillas.

1)I second "length of time" to really get the flavor into beans.
1a) I have a dish (with corn and blackeyed peas and seasonings) that gets an overnight vinegar marinade, then serve cold with chips. (Tho it's tasty in tacos too...) The overnight marinade is critical for this dish to taste like it's supposed to. So, bean salad would be another option.

2) I second mashing the beans, or partially mashing the beans (with tomato, sauted onion, garlic, chili peppers/sauce to taste) and giving it a quick 'simmer'. We use it in burritos.

3) Once you know what seasoning combos you like for certain meals - you could consider adding some of the seasoning with the canning process, or even canning the whole dish if practical (chili!). The pressure cooking process seems to do nice things for the flavor as well...
